​You’ve likely seen this familiar face on the Naples’ paella catering party circuit, at local events, and down at the farmers’ markets. But did you know that Colleen Connolly handles all the logistics behind the scenes at Fire & Rice as well?  Whatever is thrown her way, she jumps in and takes care of it.

​While you typically see Colleen interacting with customers and cooking up our award-winning paella during our busy time of year, she has many other responsibilities during the off-season, including vehicle maintenance!

​Now, you wouldn’t necessarily think that someone with an extensive background in the catering business would know how to drop a transmission pan, but Colleen makes it happen. She just grabbed the jack, slid underneath the truck, and did it. It was a pretty impressive sight to see!

​Colleen is a well-rounded person, and when she’s confronted with a task or a challenge, she just takes care of it.  If she doesn’t know how to do it, she figures out a way – there’s no stopping her! Her work ethic, smarts, and determination make her such an exceptional employee today. She’s invaluable! ​
