Nick Neveau, Fire & Rice Lansing and Fire & Rice Ann Arbor After graduating from Central Michigan University with a major in communications and a minor in hospitality, Nick worked in the restaurant business for most of his career. In the restaurant world, Nick had done it all, from dishwasher to General manager to Director of Operations to Culinary Director. He also spent several years working for hospitality companies and opened fifteen restaurants in different cities around the country. With years of restaurant and hospitality experience under his belt, Nick was looking to take his career in a new direction and had always wanted to own a food truck. After learning about the Fire & Rice food truck franchise from a friend three years ago, Nick traveled down to the original Fire & Rice location in Naples to learn more. There, Nick spent some time with Chef Paul, founder of Fire & Rice, and was impressed with the concept, success, and scalability of the business. Now, as the proud owner of two Michigan locations, Nick has found his calling in the food truck business, working parties, events, and festivals throughout the region – and having a great time. Annabelle & Walter Johnson, Fire & Rice Low Country Annabelle and Walter Johnson were living in the Naples area as retirees for several years. Detroit River Days & The World’s Largest Food Truck Rally West Riverfront Park Friday, June 21 – Sunday, June 23 This year River Days, Detroit’s one-of-a-kind festival in West Riverfront Park, partnered with the World’s Largest Food Truck Rally, which showcased 130 of the best local and national food trucks, providing endless tasty selections for patrons as they enjoyed land and water activities, such as live music, jet-ski demos, and sand sculptures. The way word-of-mouth referrals work in this day and age is that someone refers your business to someone else, and while that person may remember the name of your company or what you do, they will eventually search Google for your contact information or to learn more. When a potential customer does a Google search for your business, you absolutely need to be listed right there on page one. Anything less and that wonderful word-of-mouth referral could very well go to another company, either mistakenly or simply because that company is there and you’re not. Beating the Cash Flow Challenge One of the biggest challenges of starting a new business, according to Chef Paul, is cash flow. When you’re just starting out, you’re likely in a lower tax bracket, and you want to take advantage of that situation. During your first year, you need to invest in your business, but you also need to set enough money aside for taxes throughout the year. No one wants to be blindsided on April 15th, so it’s critical to plan ahead. Chef Paul recommends creating a new tax bank account and setting aside 31% of your income over the year, 6% for sales tax (in Florida) and 25% for federal taxes. This allows you to stay on track through your first year of business and avoid being stuck with a big tax bill in April. If you choose to continue implementing this strategy beyond into your second year of business, you’ll likely end up with a surplus as your profits grow. That’s when you can determine other ways to invest and grow your business even more, which is a good position to be in at the end of year two. Came to Be More than two decades ago, Chef Paul Schmidgall, founder of the Fire & Rice franchise and owner of the Naples’ location, was stationed in Europe with the US military and visited a small island off the coast of Spain called Menorca. There, he watched an elderly woman prepare paella on Sunday afternoons and became fascinated with the process. In early February, Nick Neveau, owner of two Fire & Rice franchises in Michigan, packed up his food truck and trailer and headed down to our location in sunny Naples, where he’s been working with Fire & Rice founder, Chef Paul Schmidgall, to get a new perspective on the business. During his visit, he’s assisted the Naples location through the height of the season to better understand our market and how we run our catering services. At Nick’s locations in Lansing and Ann Arbor, 90% of the business consists of farmers’ markets, festivals, corporate events, business lunches, tailgates, and other events. In Naples, the majority of the business is dedicated to private parties. After two months on the Fire & Rice party circuit in Naples, Nick has a deep understanding of our process and plans to integrate this knowledge into his business strategy when he returns to Michigan near the end of April. As fans watched Miquel Angel Jimenez claim his seventh PGA Tour victory in a sudden-death playoff against Bernhard Langer and Olin Browne, the intensity was palpable on the course and throughout the Lely Resort. To add to the excitement, golf fans purchased a VIP Ticket to the Taste of SW Florida, a fun-filled food festival that ran in conjunction with the event. For the fourth year in a row, Fire & Rice was at the center of it all, as on one of Naples finest dining establishments hand-selected to participate. As our chefs prepared our paella with passion and enthusiasm, the crowd gathered round and engaged in the process.
