While visiting a small island off the coast of Spain more than two decades ago, Chef Paul learned how to cook paella by watching an elderly woman prepare the dish on Sunday afternoons. She showed him her process, from cleaning the fish, shellfish, and prawns to lighting the fire and using the proper kind of rice. She wanted to pass her knowledge onto him, and he was eager to learn. It was at that moment that Chef Paul knew he wanted to bring the paella communal dining experience from Europe to the US.
Chef Paul had classical culinary training under his belt as well as a passion for people. He wanted to own his own company and be in control of his destiny, and he did just that. Not only did Chef Paul’s business concept consist of fantastic food, he created the ultimate paella experience! After successfully building his Naples’ location, Chef Paul saw a national market for paella catering and started franchising.
